Indigenous South American tribes relied on jerked meat as a stable, portable food source for at least 100 years before Lewis and Clark followed suit in their exploration of what would become the western United States.

Today, beef jerky is a common snack food and still appreciated by outdoorsmen for its long life and light weight, but most of it possesses a chewy texture.

Enter VACA, which is touted as the “unjerky.” Made using marbled beef, it is double-dehydrated to produce thin, crisp pieces that are enhanced with intense flavors.
